Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/4 cups raisins
  • 2 - eggs, beaten
  • 1 cup buttermilk
  • 2 tablespoons butter, melted

How To Make welsh tea muffins

  • Step 1
    Mix flour, sugar, salt, baking powder, soda, cinnamon and nutmeg in a large bowl.
  • Step 2
    Mix in raisins.
  • Step 3
    Whisk eggs, milk and melted butter.
  • Step 4
    Make a well in the dry ingredients and add the egg mixture. Stir together quickly. Batter will be lumpy.
  • Step 5
    Fill greased muffin cups two-thirds full and bake until tester comes out clean. Bake at 400 degrees 20-25 minutes.
