  • 1 1/2 c
    all purpose flour
  • 1/2 c
  • 1/4 tsp
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
  • 1/2 tsp
  • 1 1/4 c
  • 2
    eggs, beaten
  • 1 c
  • 2 Tbsp
    butter, melted

How to Make Welsh Tea Muffins


  1. Mix flour, sugar, salt, baking powder, soda, cinnamon and nutmeg in a large bowl.
  2. Mix in raisins.
  3. Whisk eggs, milk and melted butter.
  4. Make a well in the dry ingredients and add the egg mixture. Stir together quickly. Batter will be lumpy.
  5. Fill greased muffin cups two-thirds full and bake until tester comes out clean. Bake at 400 degrees 20-25 minutes.
