  • 2 stick
    butter, unsalted
  • 1 1/2 c
  • 4 large
  • 2 tsp
    vanilla extract
  • 4 tsp
    baking powder
  • 1/2 tsp
  • 4 c
    sifted flour
  • 1 c
  • 4-5 c
    fresh berries
  • ·
    granulated sugar mixed with cinnamon or nutmeg for topping

How to Make Very Berry Muffins


  1. Cream the softened butter and sugar;add the eggs and mix very gently. Add the vanilla, baking powder and salt;alternately add the flour and milk. DON'T OVER BEAT!
  2. By hand, mix in the berries; spoon into muffin papers. Top each with 1/2 tsp. sugar mixture.
    Bake at 375° F. for 25 minutes.

    (Sometimes I use frozen berries, not fresh. Don't thaw or add the frozen juice. Will take longer to bake.)
