Ingredients

  • 2 sticks butter, unsalted
  • 1 1/2 cups sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 cups sifted flour
  • 1 cup milk
  • 4-5 cups fresh berries
  • - granulated sugar mixed with cinnamon or nutmeg for topping

How To Make very berry muffins

  • Step 1
    Cream the softened butter and sugar;add the eggs and mix very gently. Add the vanilla, baking powder and salt;alternately add the flour and milk. DON'T OVER BEAT!
  • Step 2
    By hand, mix in the berries; spoon into muffin papers. Top each with 1/2 tsp. sugar mixture. Bake at 375° F. for 25 minutes. (Sometimes I use frozen berries, not fresh. Don't thaw or add the frozen juice. Will take longer to bake.)
