The secret's in the sour cream and you must follow the steps precisely. I hope you enjoy these as much as we do! Bakery quality at home. These are not overly sweet and two cups of blueberries are most adequate, but feel free to load them up. :)

When we first saw this blueberry muffin recipe we thought everything was wrong. There was too much sour cream, the temperature was too high and there was too much batter. Boy, we have never been happier to be wrong. This is an amazing blueberry muffin - bakery quality. It's tender and moist with blueberries in every bite. Use all the batter when filling the cupcake tins and after they're baked you have the perfect muffin top. The sugary topping is perfect on top. These are delicious!

Ingredients For ultimate blueberry muffins

4eggs

2 cwhite sugar, plus extra for tops

1 cvegetable oil

1 tspvanilla extract

4 cspooned and leveled flour

1 tspsalt

1 tspbaking soda

2 csour cream
-
2 or 3 cfresh blueberries
How To Make ultimate blueberry muffins

1Preheat oven to 400F. Beat eggs with a mixer for 2 minutes. Then gradually add white sugar until combined.

2Slowly add oil while continuing to beat until well combined.

3Now "stir" in vanilla extract.

4In a separate bowl combine flour, salt, and baking soda.

5Alternating between flour mixture and sour cream, gradually "stir" them into the egg mixture. Combine well but not excessively.

6Gently fold in blueberries.

7Pour into prepared muffin tins (greased and floured or paper-lined) filled to level.

8Sprinkle liberally with remaining extra sugar.

9Bake for 20-25 minutes until nicely browned and spring back when touched.
