Ingredients

  • 8 cups cornbread stuffing
  • 2 tablespoons olive oil
  • 1 stick butter, softened
  • 4 - celery heart ribs
  • 1 - white onion
  • 3 - fuji apples
  • 2 tablespoons poultry seasoning
  • 1/4 cup chopped parsley
  • 3 cups chicken stock
  • - salt and peper

How To Make thanksgiving muffins

  • Step 1
    Preheat oven to 375 degrees F.
  • Step 2
    Over medium high heat olive oil and 4 tablespoons butter. Add bay leaf, vegetables and apples. Add salt, pepper and poultry seasoning.
  • Step 3
    As the veggies start to soften add stuffing and stock mixing well.
  • Step 4
    Spray large muffin tray with olive oil non stick spray. Over fill each muffin and shape with a large spoon. Bake 10 to 15 minutes so that the muffins are set. Serve hot.
