This is an awesome muffin to add dried or fresh fruit, nuts, chocolate or other flavored chips, etc. It turns out perfect and delicious everytime. It is also really good by itself, if you really prefer a sweeter muffin. My family loves these!

Ingredients

  • 2 - eggs
  • 1 cup evaporated milk
  • 1/2 cup margarine or buttered flavored shortening (melted)
  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup fresh, frozen or dried fruit, chocolate or other flavored chips, nuts, etc. (optional)

How To Make sweet muffins

  • Step 1
    Heat oven to 400 degrees. Grease bottoms of 12 medium muffin cups (2 3/4 inches in diameter).
  • Step 2
    Beat eggs; stir in milk and oil and set aside. Mix dry ingredients and make a well in the center. Pour wet ingredients into the dry ingredients and combine just until moistened.
  • Step 3
    Batter should be lumpy. Fill muffin cups 2/3-3/4 full. Bake 20-25 minutes or until golden brown. Immediately remove from the pan. Cool on wire racks, or serve hot.
