strawberry streusel sheet of muffins

I came up with an idea one morning when we had family staying with us and I decided instead of individual muffins for breakfast I would make a sheet of streusel muffins. The buttery crunchy streusel has crushed up nilla wafers in it. Enjoy! Feeds alot! 8)

Ingredients

  • 1 cup sugar
  • 1 cup (1 stick) butter, softened
  • 2 - eggs, beaten
  • 4 cups all purpose flour
  • 2 tablespoons plus 2 tsp. baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • 2 teaspoons pure vanilla extract
  • 3 cups strawberries, frozen or fresh, chopped
  • STREUSEL TOPPING
  • 1 cup sugar
  • 3/4 cup flour
  • 1 teaspoon cinnamon
  • 1 stick butter, softened
  • 3/4 cup nilla wafer cookies, crushed

How To Make strawberry streusel sheet of muffins

  • Step 1
    Preheat oven to 350F. In a large mixing bowl. cream sugar and butter. Add eggs, mix well. Combine flour, baking powder and salt, add to the creamed mixture alternating with milk. Stir in vanilla. Fold in strawberries.
  • Step 2
    Spray a cookie sheet (11-inch) with pam or butter Crisco. Spread muffin mix even on sheet. Topping-In a medium bowl, combine sugar, flour, and cinnamon, cut in soft butter until crumbly, add crushed cookie crumbs in mixture and sprinkle topping all around muffin mix.
  • Step 3
    Bake at 350 for 30-35 minutes or until center tests done and toothpick comes out clean. It should be golden in color. should get 12 or more serving depending on size.
