strawberry, raspberry, and mandarin orange muffins

This is the lightest homemade (off the top of my head) muffin I've ever made. I hope you guys like it. glaze or powder sugar sprinkled on top would work, if you like

Ingredients

  • 1 package 2lbs of fresh strawberries
  • 1/4 cup of fresh raspberries
  • 1/4 cup of fresh mandarin oranges (slices)
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 - egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 pinch of sea salt
  • 2 cups of all purpose flour

How To Make strawberry, raspberry, and mandarin orange muffins

  • Step 1
    Preheat oven at 350 degrees. Clean fruit and blend in blender till smooth. Pour mix into mixing bowl, mix butter into the mixed fruit in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and sea salt over the mixture and mix in. Add the flour last, mix. Pour the finish mix into muffin pan and bake in oven for 15 mins. or until done.
