This comes from Linda Jachhimstal via Taste of Home, 2000. I really like them...I am beginning to think of myself as the muffin queen. These have a really nice, unusual but delicious flavor I think. We like them and hope you do as well! Tell us what you think!
1In a large bowl, combine the first eight ingredients. In another bowl, beat the egg, yogurt, oil and molasses until smooth.
2Make a well in the center of the dry ingredients, and pour in the wet ingredients. Stir together, but just until moistened. Fold in the pears, raisins and nuts.
3Fill greased muffin cups (or place cup liners in the cups) about 3/4 full. Bake mini muffins at 400 degrees for 10-12 minutes (or standard size muffin/cupcake cups for 18-22 minutes) until muffins test done. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Yield: 2 dozen mini muffins or 14 standard sized muffins.
