My kids love these muffins.
Blue Ribbon Recipe
A fluffy oat muffin that's full of cinnamon flavor. When you hear snickerdoodle you think COOKIE, but this recipe turns that notion on its ear. The muffin is simple to make, tender and moist, with a little bit of chewiness from the oats. Sprinkling cinnamon sugar on top gives it the snickerdoodle feel.

Ingredients
- 1 1/2 cups self-rising flour
- 1 cup oats
- 1/2 cup plus 1/3 cup sugar, divided
- 1 - egg
- 4 tablespoons butter
- 1 teaspoon vanilla
- 1 cup milk
- 1 teaspoon cinnamon
How To Make snickerdoodle muffins

Step 1Preheat the oven to 400 degrees F. In a large bowl, mix together the flour, oats, and 1/2 cup sugar.

Step 2In a separate bowl, mix together the egg, butter, vanilla, and milk.

Step 3Add the wet mixture to the dry mixture; mix well.

Step 4Fill the muffin cups 2/3 of the way full. Bake for 12-14 minutes.

Step 5While the muffins bake, mix together the remaining 1/3 cup sugar and the cinnamon in a small bowl.

Step 6Once the muffins are out, top with the cinnamon/sugar mixture. If you prefer a lot of topping, brush a little melted butter on top of the muffin to get more of the mixture to stick.
