This is a Fall classic in our home! The muffins taste like Snickerdoodle cookies. They're great for breakfast, with a cup of steaming hot coffee. Muffins are said to originate in 1874 in New York City when British Immigrant Samuel Bath Thomas adapted his English Muffin recipe to better appeal to Americans. That led to the "toaster crumpet" (or muffin, to locals). Several variations then became popular across the U.S. The "snickerdoodle muffin" was inspired by Nellie Campbell's popular Snickerdoodle Cookie recipe which she shared in her New York City newspaper column in the late 1800s.

Ingredients

  • MUFFINS
  • 1/2 cup vegetable oil (or canola oil)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • 1 large apple - peeled, cored and diced
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • TOPPING
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • GLAZE
  • 1/2 cup confectioners' sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

How To Make snickerdoodle apple muffins

  • Step 1
    Preheat oven to 350°F. Coat muffin tin with non-stick cooking spray (or add paper liners to cups).
  • Step 2
    In a bowl, stir sugar into the oil until well combined. Add eggs, milk and vanilla, and stir just until incorporated. Stir in diced apple.
  • Step 3
    In a small bowl, combine flour, baking powder, cinnamon and salt. Gradually add flour mixture to the milky mixture, stirring just enough to incorporate flour mixture.
  • Step 4
    Pour batter into each muffin cup to 2/3 full. Place muffin tin in oven to bake for 15 to 18 minutes. Remove muffin tin to cool on counter for 1 minute. Then transfer muffins to rack to cool completely.
  • Step 5
    In a shallow plate, combine the sugar and cinnamon together.
  • Step 6
    Using a pastry brush, brush the melted butter on top of each muffin. Dip muffin tips in the cinnamon/sugar mixture.
  • Step 7
    Mix together the confectioners' sugar, milk and vanilla. Drizzle the glaze on top of the muffins.
