Ingredients

  • 1 cup plain nonfat greek yogurt
  • 1/2 cup pure honey
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 cup canned pumpkin
  • 2 cups old-fashioned oats

How To Make skinny oat and honey pumpkin muffins

  • Step 1
    Preheat oven to 400ºF and spray a muffin tin with non-stick spray. Place all ingredients, except for the oats, in a blender and process until fully mixed.
  • Step 2
    Add the oats, 1/2 cup at a time and blend until smooth. Distribute batter evenly to fill all 12 muffin cups.
  • Step 3
    Bake for 17-20 minutes, or until an inserted toothpick comes out clean.
