I found this on a diabetic website. They are simple and quick to make. I often add allspice, cloves (1/4 tsp each) , and cinnamon (1 tsp) for a little more flavor. The basic muffin is great and with a such a low carb count (4.4 grams per muffin) and 75 calories per muffin. I can afford to add preserves or fruit and cream cheese for a tasty treat.

Ingredients

  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 3 - eggs
  • 1/4 cup almond milk
  • 2 tablespoons honey
  • 1 teaspoon lemon juice

How To Make simple almond flour muffins

  • Step 1
    Preheat oven to 350 degrees and line cupcake pan with paper liners. Lightly spray liners with non-stick cooking spray.
  • Step 2
    Combine all ingredients.
  • Step 3
    Fill each liner almost halfway full.
  • Step 4
    Bake for 14-17 minutes. To check to see if they are done, slightly jiggle the pan.
