This was a recipe I developed years ago to satisfy hungry football players.

Ingredients

  • 1 package corn meal muffin or bread mix
  • 1 pound sliced bacon cooked and crumbled
  • 1 cup light brown sugar

How To Make semi homemade breakfast muffin tops

  • Step 1
    Prepare the muffin recipe on the corn muffin/bread mix, ( gluten free works well) according to directions using eggs and liquid as directed. I always use buttermilk when I have it instead of waterand real butter instead of oil.
  • Step 2
    Grease and flour or spray with Pam your muffin pans. Fill muffin tins or muffin top tins with batter. Top with a tablespoon of brown sugar and enough bacon crumbles to coat well. Bake in pre heated oven at 375 degrees until slightly browned on the edges and cooked thoroughly. Serve warm with Cocoa or coffee for a tasty quick breakfast.
