This is a great Italian flavor packed zucchini muffin. Great with any pasta dish or with eggs in the morning! I also love to snack on them.

  • 2 c
    zucchini shredded
  • 4 oz
    shredded provolone cheese
  • 3 Tbsp
    finely chopped onion
  • 1/2 c
    italian bread crumbs
  • 1/4 tsp
  • 2
  • ·
    dash of pepper

How to Make Savory Zucchini Muffins


  1. Put all the above Ingredients in a bowl and mix by hand.
  2. Spray muffin pan with non stick cooking spray.
  3. Spoon batter into muffin tin.
  4. Pre-heat and cook at 375 degrees F. until golden color. about 20-25 minutes.
