Saw this in a cookbook and had to try it out. It was absolutely delicious. It's not exactly carb friendly... but they taste great with butter and preserves :-)

Ingredients
- - preheat oven to 400 * f
- 1 cup cooked rice
- 1 1/2 cups all purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1 cup milk
- 2 - eggs, beaten
- 5 tablespoons butter, melted
How To Make rice muffins

Step 1Sift flour, salt, sugar, and baking powder together then set aside

Step 2Mix milk, eggs, butter, and rice together in a large bowl - then carefully add the dry ingredients. Mix just till it's all moistened

Step 3Pour batter into greased muffin tins and bake for 25 minutes
