rice and spam muffins

I posted a recipe for Rice muffins earlier, and I love playing around with recipes -- I was making breakfast and had some leftover spam.... so I thought I'd play with the muffin recipe and this is what I came up with. The best part of all is, You can put the extras in a sealable plastic bag and take out just what you want to reheat. 1 minute in a microwave and it's just as moist and tender as it was coming out of the oven. I hope you enjoy them as much as we did!

Ingredients

  • 1 cup milk
  • 2 - beaten eggs
  • 5 tablespoons melted butter
  • 1 cup cooked rice
  • 1 1/2 cups all purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon dill weed (dried)
  • 2 teaspoons dried minced onion
  • 1/2 teaspoon salt (or less)
  • 1 tablespoon baking powder
  • 1 cup finely diced spam

How To Make rice and spam muffins

  • Step 1
    Preheat oven to 400. In a large bowl, Mix rice, eggs, milk, and melted butter together with the minced onion and dill. Let sit for about 10 minutes
  • Step 2
    sift flour, salt, sugar and baking powder together. **You can use less salt if you're not using the low sodium spam. otherwise it can make recipe too salty.
  • Step 3
    Mix the milk and rice mixture with the dry ingredients then add the spam.... mix gently but mix well
  • Step 4
    spoon batter into greased muffin tins filling them about 3/4 of the way. Bake for 25 minutes at 400.
  • Step 5
    These muffins have a texture similar to cornbread and are delicious with breakfast eggs and potatoes... or great as an accompanyment to dinner. Can eat them plain by themselves, or put a little herbed butter on them while they're hot.
