  • 2 clove
    flour
  • 1/4 c
    brown sugar
  • 1/2 tsp
    salt
  • 1/4 tsp
    baking soda
  • 1 1/2 tsp
    pumpkin pie spice
  • 1 c
    pumpkin, fresh or canned
  • 4 Tbsp
    butter, melted and cooled
  • 2
    eggs
  • 1/4 c
    buttermilk
  • 2 tsp
    vanilla
  • 1/2 c
    walnuts, crushed, plus 2 tablespoons for topping

  • 1
    Oven to 350 degrees. Grease 12 muffin cups. Sift dry ingredients. Combine pumpkin, butter, eggs, buttermilk and vanilla. Combine in dry ingredients. Stir in nuts. Put 3/4 inot each muffin cup. Sprinkle with 2 T nuts. Bake 18-20 min or until they spring back when pressed with a finger.
