It's a dreary day and my tv isnt working so I decided to play in the kitchen. Spiced pumpkin muffins with a brown sugar and cinnamon layer inside and topped off with a mapley glaze. (My son is with his dad today and i wanted to surpris him with something pumpkin when he got home. Thea got me on that kick lol. Since I didnt have chocolate chips to make her yummy recipe I opted for these : )

Ingredients For pumpkin muffins with brown sugar and cinnamon middles and maple glaze

  • 2 c flour
  • 1/3 c sugar
  • 2/3 cup brown sugar packed firm
  • 1tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 c butter melted
  • 1/2 c canned pumpkin
  • 1/3 c buttermilk
  • 2 eggs slightly beaten
  • 1 t vanilla
  • CENTER
  • 1/2 c brown sugar and 1 tablespoon cinnamon mixed together
  • GLAZE
  • 1 c confectioners sugar
  • 1 teaspoon vanilla extract
  • 2 tablspoons milk
  • 2 tablespoons maple syrup

How To Make pumpkin muffins with brown sugar and cinnamon middles and maple glaze

    Mix first 9 ingredients together in large bowl (dry ingredients)

    In seperate bowl stir togeether butter, pumpkin, buttermilk, eggs and vanilla.

    Add the wet mixture to the dry mixture, stirring just until moistened.

    Spray muffin pan lightly with non stick spray and fill 1/3 of the way with batter.

    Now sprinkle the brown sugar and cinnamon mix over the top of each muffin cup.

    Top with remaining batter

    Bake in preheated 400 degree oven for about 18 min. (Mine took 18 check after 15, if toothpick comes out clean they are done)

    Allow to cool in pan for about five minutes and then remove to plate

    Glaze: Put confectioners sugar in bowl

    add vanilla

    stir this all together until blended well

    add syrup (i used maple pancake syrup) and stir till well blended

    dip tops of muffins in glaze and return to plate

    watch them disappear
