Ingredients
- 1 cup canned pumpkin puree
- 1/3 cup vegetable oil
- 2 teaspoons baking powder
- 1 1/4 cups sugar
- 1 1/4 cups rice flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
How To Make pumpkin muffins

Step 1Preheat oven to 350 degrees.

Step 2Mix baking powder with 3 tablespoons + 1 teaspoon water

Step 3In large bowl, combine pumpkin, oil, baking powder/water, and sugar. Mix until well blended.

Step 4Add the flour, spices, 1 teaspoon baking powder, baking soda and salt. Whisk to combine.

Step 5Fill paper lined muffin tin about 2/3 full.

Step 6Bake for 25-30 minutes. Cool in pan 5 minutes.
