Ingredients

  • 1 c
    canned pumpkin puree
  • 1/3 c
    vegetable oil
  • 2 tsp
    baking powder
  • 1 1/4 c
    sugar
  • 1 1/4 c
    rice flour
  • 1 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    ginger
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt

How to Make Pumpkin Muffins

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Mix baking powder with 3 tablespoons + 1 teaspoon water
  3. In large bowl, combine pumpkin, oil, baking powder/water, and sugar. Mix until well blended.
  4. Add the flour, spices, 1 teaspoon baking powder, baking soda and salt. Whisk to combine.
  5. Fill paper lined muffin tin about 2/3 full.
  6. Bake for 25-30 minutes. Cool in pan 5 minutes.
  7. Enjoy.
