Ingredients

  • 1 cup canned pumpkin puree
  • 1/3 cup vegetable oil
  • 2 teaspoons baking powder
  • 1 1/4 cups sugar
  • 1 1/4 cups rice flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

How To Make pumpkin muffins

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Mix baking powder with 3 tablespoons + 1 teaspoon water
  • Step 3
    In large bowl, combine pumpkin, oil, baking powder/water, and sugar. Mix until well blended.
  • Step 4
    Add the flour, spices, 1 teaspoon baking powder, baking soda and salt. Whisk to combine.
  • Step 5
    Fill paper lined muffin tin about 2/3 full.
  • Step 6
    Bake for 25-30 minutes. Cool in pan 5 minutes.
  • Step 7
    Enjoy.
