pumpkin apple streusel muffins

My kids and husband love this recipe. These muffins are good with breakfast or an afternoon snack!

Ingredients

  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spices
  • 1/2 teaspoon salt
  • 2 - eggs, slightly beaten
  • 1 cup canned pumpkin
  • 1/4 cup vegetable oil
  • 2 cups peeled, cored and finely chopped Granny Smith apples (about 2 large apples)
  • TOPPING
  • 1/4 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon cinnamon
  • 4 teaspoons margarine

How To Make pumpkin apple streusel muffins

  • Step 1
    Preheat oven to 350 degrees. Line muffin tins with paper liners.
  • Step 2
    In large bowl, combine flour, sugar, baking soda, pumpkin pie spice, and salt.
  • Step 3
    In medium bowl, combine eggs, pumpkin, oil and apples.
  • Step 4
    Add pumpkin mixture to flour mixture, stir just to moistened.
  • Step 5
    Spoon batter into lined muffin cups 3/4 full.
  • Step 6
    TOPPING: In small bowl, combine topping ingredients, mixing with fork until blended.
  • Step 7
    Sprinkle evenly over muffins.
  • Step 8
    Bake at 350 degrees 35 minutes or until done.
