Ingredients

  • 2 1/2 c
    flour
  • 2 c
    sugar
  • 1 tsp
    baking soda
  • 1 Tbsp
    pumpkin pie spices
  • 1/2 tsp
    salt
  • 2
    eggs, slightly beaten
  • 1 c
    canned pumpkin
  • 1/4 c
    vegetable oil
  • 2 c
    peeled, cored and finely chopped Granny Smith apples (about 2 large apples)
  • TOPPING

  • 1/4 c
    sugar
  • 2 Tbsp
    flour
  • 1/4 tsp
    cinnamon
  • 4 tsp
    margarine

How to Make Pumpkin Apple Streusel Muffins

Step-by-Step

  1. Preheat oven to 350 degrees. Line muffin tins with paper liners.
  2. In large bowl, combine flour, sugar, baking soda, pumpkin pie spice, and salt.
  3. In medium bowl, combine eggs, pumpkin, oil and apples.
  4. Add pumpkin mixture to flour mixture, stir just to moistened.
  5. Spoon batter into lined muffin cups 3/4 full.
  6. TOPPING:
    In small bowl, combine topping ingredients, mixing with fork until blended.
  7. Sprinkle evenly over muffins.
  8. Bake at 350 degrees 35 minutes or until done.
