" pucker up " cranberry muffins

If you like the tartness of Cranberries, you will love these beautiful muffins...moist and savory with a pop of tartness...we just love them...they were supposed to be for Thanksgiving...well, lets just say they won't be making it to my table...lol! Enjoy! My photos

Ingredients

  • 1 cup butter, softened
  • 1 - 8 ounces cream cheese, softened
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons vanilla extract
  • 4 - eggs
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups cranberries, dusted with 2 tablespoons flour
  • 1/2 cup pecans, chopped - or favorite nut

How To Make " pucker up " cranberry muffins

  • Step 1
    Preheat oven to 350 degrees F. Spray or lightly butter muffin tins.
  • Step 2
    In a large mixing bowl; beat the butter and sugar till fluffy; beat in the cream cheese until creamy; add the eggs and vanilla. Beat until well combined.
  • Step 3
    In another bowl: Mix together flour, baking powder, and salt. Fold in cranberries and nuts. Add to wet ingredients.
  • Step 4
    Immediately, fill muffin tins 2/3 full with batter. I then sprinkle the tops with sugar. ( totally optional )
  • Step 5
    Bake until inserted toothpick comes out clean, about 20 - 25 minutes. Let cool for a few minutes before removing from pan.
