If you like the tartness of Cranberries, you will love these beautiful muffins...moist and savory with a pop of tartness...we just love them...they were supposed to be for Thanksgiving...well, lets just say they won't be making it to my table...lol!

Ingredients

  • 1 c
    butter, softened
  • 1 - 8 oz
    cream cheese, softened
  • 1 1/2 c
    sugar
  • 1 1/2 tsp
    vanilla extract
  • 4
    eggs
  • 2 c
    flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    cranberries, dusted with 2 tablespoons flour
  • 1/2 c
    pecans, chopped - or favorite nut

How to Make " Pucker Up " Cranberry Muffins

Step-by-Step

  1. Preheat oven to 350 degrees F.

    Spray or lightly butter muffin tins.
  2. In a large mixing bowl; beat the butter and sugar till fluffy; beat in the cream cheese until creamy; add the eggs and vanilla. Beat until well combined.
  3. In another bowl:

    Mix together flour, baking powder, and salt.

    Fold in cranberries and nuts. Add to wet ingredients.
  4. Immediately, fill muffin tins 2/3 full with batter. I then sprinkle the tops with sugar. ( totally optional )
  5. Bake until inserted toothpick comes out clean, about 20 - 25 minutes.

    Let cool for a few minutes before removing from pan.
