I think I got this recipe from a very old Betty Crocker recipe book of my mother's. I am not sure. However, it turns out great and is a good one to add herbs, cheese, etc. Great basic muffin, not too sweet and great with many dishes. These turn out realy well every time!

Ingredients
- 2 - eggs
- 1 cup evaporated milk
- 1/2 cup canola oil, or i use butter flavored shortening, or margarine, melted and cooled a little while
- 3 cups all-purpose flour
- 1/2 cup granulated sugar
- 6 teaspoons baking powder
- 2 teaspoons salt
How To Make popular muffins

Step 1Heat oven to 400F degrees. Grease bottoms of 12 medium muffin cups (2 3/4 inches in diameter). Beat eggs; stir in milk and oil. Set aside.

Step 2Stir up well the dry ingredients and make a well in the center. Add the wet ingredients to the well. Stir just enough to moisten all, do not overstir. Batter will be lumpy.

Step 3Fill muffin cups 2/3 to 3/4 full. Bake 20-25 minutes or until golden brown. Immediately remove from the pan; and cool on wire racks. Serve hot, or cool to freeze for a later time.
