Ingredients

3 c
all-purpose flour
2 c
sugar
2 tsp
baking soda
1 tsp
ground cinnamon
1/2 tsp
salt

eggs
1 c
vegetable oil
1 tsp
vanilla extract
4 c
chopped, peeled ripe pears ( about 6 medium)
1 c
chopped pecans

How to Make Pecan Pear Muffins

Step-by-Step

  • 1In a large bowl, combine the flour, sugar, baking soda, cinnamon and salt. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened.
  • 2Fold in pears and pecans. Fill paper-lined muffin cups two-thirds full.
  • 3Bake at 350 for 25-30 minutes or until center of muffins spring back when touched lightly. Cool 5 minutes before removing from pans to wire racks. makes 2 dozen.
