Ingredients

  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon salt
  • 3/4 cup canola oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar, light
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 medium pear, peeled and diced
  • 1/2 cup pecans, chopped

How To Make pear and pecan muffins

  • Step 1
    Preheat oven to 400.
  • Step 2
    Line a 12 cup muffin tin with paper liners.
  • Step 3
    Whisk together flour, baking powder, cinnamon and salt. Set aside.
  • Step 4
    Stir together oil, sugar and brown sugar until well combined.
  • Step 5
    Stir in egg and vanilla, mixing well. Add flour mixture and mix just until combined. Stir in pears and pecans.
  • Step 6
    Fill each muffin cup about 2/3 full. Bake 18 to 20 minutes or until edges are browned and a toothpick inserted into the center comes out clean.
