peach streusel muffins

I just love these yummy muffins in the late summer....when the peaches are ripe and juicy....they also freeze well so you can enjoy them in the winter too....i hope you like these....we sure do.

Ingredients
- 2 sticks margarine {melted}
- 2 cups whole milk
- 4 large eggs
- 1 tablespoon vanilla or almond extract...{we use almond}
- 2 cups sugar
- 6. cups all purpose flour
- 3 tablespoons baking powder
- 1 teaspoon cinnamon, ground
- 1 teaspoon salt
- 5 cups diced peaches {chopped small}
- 2/3 cup brown sugar
- 2/3 cup all purpose flour
- 2/3 cup finely chopped pecans
- 4 tablespoons soft oleo
- 1 teaspoon ground cinnamon
How To Make peach streusel muffins

Step 1in large mixing bowl combine the melted margarine, eggs, sugar and extract. Blend well. Add flour, and milk alternately until completely blended. Add the baking powder, cinnamon, and salt. Fold in peaches last. Prepare muffin tins, with paper liners or cooking spray. Fill each section to about 1/2 full. Mix together: 2/3 c of brown sugar, 2/3c flour, chopped pecans,oleo and cinnamon, and sprinkle over each muffin. Bake for about 18 - to 20 mins...when the centers spring back. Cool in pans for about 5 mins, remove and cool completely on wire racks.. Yield about 3 dozen.
