peach muffins with streusel topping

Everyone loved these muffins! Found the recipe and added a streusel topping, works perfectly :)

Ingredients

  • 3 cups all purpose flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup vegetable oil
  • 3 - eggs, lightly beaten
  • 2 cups white sugar
  • 2 cups peaches, peeled, pitted and chopped
  • STREUSEL TOPPING
  • 1/4 cup sugar, white or brown
  • 3 tablespoons flour
  • 2 tablespoons butter

How To Make peach muffins with streusel topping

  • Step 1
    Preheat oven to 400 degrees. Grease muffin cups or use liners.
  • Step 2
    In a large bowl, mix flour, baking soda, cinnamon and salt. Separately mix oil, eggs and sugar in medium bowl.
  • Step 3
    Stir the oil mixture into the dry mixture just until moistened. Fold in peaches. Spoon into cups.
  • Step 4
    Bake 20-25 minutes or until toothpick comes out clean. Cool 5 minutes until moving onto a cooling rack, then cool completely.
  • Step 5
    STREUSEL TOPPING: Put 3 TBS flour and 1/4 cup sugar into small bowl. Add 2 TBS butter and lightly mix with fingers until it is crumbly. Sprinkle onto muffins just before baking.
