peach muffins with streusel topping
Everyone loved these muffins! Found the recipe and added a streusel topping, works perfectly :)

Ingredients
- 3 cups all purpose flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup vegetable oil
- 3 - eggs, lightly beaten
- 2 cups white sugar
- 2 cups peaches, peeled, pitted and chopped
- STREUSEL TOPPING
- 1/4 cup sugar, white or brown
- 3 tablespoons flour
- 2 tablespoons butter
How To Make peach muffins with streusel topping

Step 1Preheat oven to 400 degrees. Grease muffin cups or use liners.

Step 2In a large bowl, mix flour, baking soda, cinnamon and salt. Separately mix oil, eggs and sugar in medium bowl.

Step 3Stir the oil mixture into the dry mixture just until moistened. Fold in peaches. Spoon into cups.

Step 4Bake 20-25 minutes or until toothpick comes out clean. Cool 5 minutes until moving onto a cooling rack, then cool completely.

Step 5STREUSEL TOPPING: Put 3 TBS flour and 1/4 cup sugar into small bowl. Add 2 TBS butter and lightly mix with fingers until it is crumbly. Sprinkle onto muffins just before baking.
