Peach Muffins with Streusel Topping

3 call purpose flour

1 Tbspcinnamon

1 tspbaking soda

1 tspsalt

3/4 cvegetable oil

3eggs, lightly beaten

2 cwhite sugar

2 cpeaches, peeled, pitted and chopped

STREUSEL TOPPING
-
1/4 csugar, white or brown
-
3 Tbspflour
-
2 Tbspbutter
How to Make Peach Muffins with Streusel Topping
- Preheat oven to 400 degrees. Grease muffin cups or use liners.
- In a large bowl, mix flour, baking soda, cinnamon and salt. Separately mix oil, eggs and sugar in medium bowl.
- Stir the oil mixture into the dry mixture just until moistened. Fold in peaches. Spoon into cups.
- Bake 20-25 minutes or until toothpick comes out clean. Cool 5 minutes until moving onto a cooling rack, then cool completely.
- STREUSEL TOPPING: Put 3 TBS flour and 1/4 cup sugar into small bowl. Add 2 TBS butter and lightly mix with fingers until it is crumbly. Sprinkle onto muffins just before baking.
