I have had this recipe for many years and I'm placing it here for safe-keeping. These muffins are so fresh and delicious -- resembles peach cobbler.

Ingredients

  • 1 extra large egg
  • 1/2 cup sour cream (can use low fat)
  • 1/2 cup milk
  • 3 tablespoons oil
  • 1 teaspoon pure vanilla extract
  • 2 large fresh peaches, peeled and diced
  • 1/4 cup sugar
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • TOPPING
  • 1 tablespoon melted butter, unsalted
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 1/8 teaspoon cinnamon

How To Make peach muffins

  • Step 1
    Combine egg, sour cream, milk, vanilla and oil. Mix well.
  • Step 2
    In a separate bowl, combine flour, baking powder, soda and salt.
  • Step 3
    Combine dry ingredients into wet and mix thoroughly. In a bowl, sprinkle the 2 tbsp. sugar over the peaches and mix gently. Add peaches to batter and stir gently into the mix.
  • Step 4
    Grease a muffin tin well and preheat oven to 375 degrees F.
  • Step 5
    For topping - combine melted butter with flour sugar and cinnamon - mix well. Add topping to each muffin and bake for approximately 25-30 minutes or until a toothpick inserted into middle comes out clean.
