peach muffins
I have had this recipe for many years and I'm placing it here for safe-keeping. These muffins are so fresh and delicious -- resembles peach cobbler.

Ingredients
- 1 extra large egg
- 1/2 cup sour cream (can use low fat)
- 1/2 cup milk
- 3 tablespoons oil
- 1 teaspoon pure vanilla extract
- 2 large fresh peaches, peeled and diced
- 1/4 cup sugar
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- TOPPING
- 1 tablespoon melted butter, unsalted
- 2 tablespoons flour
- 2 tablespoons sugar
- 1/8 teaspoon cinnamon
How To Make peach muffins

Step 1Combine egg, sour cream, milk, vanilla and oil. Mix well.

Step 2In a separate bowl, combine flour, baking powder, soda and salt.

Step 3Combine dry ingredients into wet and mix thoroughly. In a bowl, sprinkle the 2 tbsp. sugar over the peaches and mix gently. Add peaches to batter and stir gently into the mix.

Step 4Grease a muffin tin well and preheat oven to 375 degrees F.

Step 5For topping - combine melted butter with flour sugar and cinnamon - mix well. Add topping to each muffin and bake for approximately 25-30 minutes or until a toothpick inserted into middle comes out clean.
