Ingredients

  • 2 c
    all purpose flour
  • 1 1/2 tsp
    salt
  • 1 Tbsp
    baking powder
  • 1 c
    milk
  • 2 large
    eggs
  • 2/3 c
    sugar
  • 1 c
    creamy peanut butter
  • 1/3 c
    jam or preserves of your choice
  • 1/3 c
    oil

How to Make PB & J Muffins

Step-by-Step

  1. Heat oven to 375 degrees. Spray muffin pan with non-stick spray or use liners.
  2. Stir together flour, salt, and baking powder in a large bowl.
  3. Add milk, eggs, sugar, peanut butter and oil to bowl; combine ingredients on the low speed of an electric mixer, just until moistened. DO NOT OVER BEAT.
  4. Evenly fill muffin cups with half of the batter.
  5. Place 2 level teaspoons of jam or preserves.
  6. Evenly divide the remaining batter between muffin cups. Sprinkle with sugar.
  7. Bake for 18-20 minutes. Remove from oven; cool in pan 5 minutes.
