Kids love to help make these muffins. I do not remember where I found this recipe but the grand kids love them.

Ingredients
- 2 cups flour
- 1 1/2 teaspoons salt
- 1 tablespoon baking powder
- 2/3 cup sugar
- 1 cup milk
- 2 large eggs
- 1 cup peanut butter, creamy
- 1/4 cup vegetable oil
- 1/2 cup jam/preserves of your choice
- 1/4 cup sugar for topping
How To Make pb & j muffins

Step 1Heat oven to 375 deg, spray muffin pan with cooking spray. Stir dry ingredients together well (except the 1/4 cup sugar topping) in a large bowl. Combine milk, eggs, peanut butter, and oil in another bowl mixing well. Add to dry ingredients and with an electric mixer on low mix until all moistened, DO NOT OVER BEAT.

Step 2Fill muffin cups with 1/2 of the batter. Place 2 level teaspoons jam in the center of each muffin. Evenly add remaining batter between muffin cups.

Step 3Sprinkle with sugar topping, bake for 18-20 min. Remove from oven and let cool in pan 5 min.
