Family loves these for snacks or breakfast on the go! Easy to make just a little planning needed. Had the recipe for years, lost it, found it again on Allrecipes.

Ingredients

  • COMBINE, COVER AND REFRIGERATE OVERNIGHT:

  • 2 c
    buttermilk
  • 1 c
    oats, regular
  • IN THE MORNING ADD:

  • 1 2/3 c
    wheat flour
  • 1 c
    brown sugar, lightly packed
  • 1/4 c
    vegetable oil
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2
    eggs
  • THESE INGREDIENTS ARE OPTIONAL:

  • 1 c
    raisins
  • 1 c
    chopped pecans

How to Make Overnight Oatmeal Muffins

Step-by-Step

  1. Bake in greased muffin pans or line with muffin liners. (I don't do this as they stick to the paper badly) Bake at 350F for 15-17 minutes. This makes almost 2 dozen muffins.
