Family loves these for snacks or breakfast on the go! Easy to make just a little planning needed. Had the recipe for years, lost it, found it again on Allrecipes.

Ingredients

  • COMBINE, COVER AND REFRIGERATE OVERNIGHT:
  • 2 cups buttermilk
  • 1 cup oats, regular
  • IN THE MORNING ADD:
  • 1 2/3 cups wheat flour
  • 1 cup brown sugar, lightly packed
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 - eggs
  • THESE INGREDIENTS ARE OPTIONAL:
  • 1 cup raisins
  • 1 cup chopped pecans

How To Make overnight oatmeal muffins

  • Step 1
    Bake in greased muffin pans or line with muffin liners. (I don't do this as they stick to the paper badly) Bake at 350F for 15-17 minutes. This makes almost 2 dozen muffins.
