A yummy breakfast treat. I have made these with dried cherries, dried strawberries, and dried cranberries. Never mixing them.

Ingredients

  • 1 cup whole wheat flour
  • 1 1/2 cups old-fashioned oats
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 cup canola oil
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup Greek yogurt, vanilla flavored
  • 1 cup dried cherries, strawberries or cranberries

How To Make oatmeal yogurt muffins

  • Step 1
    Preheat oven to 350 degrees. Line muffin pan with paper liners.
  • Step 2
    In a large bowl, whisk together flour, oats, baking powder, baking soda, and cinnamon.
  • Step 3
    In a bowl, whisk together the canola oil, brown sugar, eggs, vanilla, and Greek yogurt.
  • Step 4
    Stir wet ingredients into the dry ingredients until well combined.
  • Step 5
    Fold in 1 cup of dried berries.
  • Step 6
    Place batter in muffin cups, filling until almost full.
  • Step 7
    Bake for 15-18 minutes until tops are brown.
  • Step 8
    Let cool for 10 minutes before placing on wire rack to cool.
