oatmeal cream cheese muffins
These muffins are by far our daughter's favorite...so I usually double the batch! They are especially good warm...not a better way to start a morning! (from a Great American recipe)

Ingredients
- 1 cup old-fashioned cooking oats
- 1 cup milk
- 1/2 cup packed brown sugar
- 1/4 cup vegetable oil
- 1 - egg, beaten
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 ounces cream cheese, divided into 12 parts
- 12 - paper muffin cups
- TOPPING
- 1 tablespoon old-fashioned cooking oats
- 1 tablespoon packed brown sugar
How To Make oatmeal cream cheese muffins

Step 1Preaheat oven to 350 degrees. Place paper muffin cups in muffin tin.

Step 2In medium bowl, place oats and milk. Let stand for 30 minutes.

Step 3Stir brown sugar, oil and egg into soaked oats.

Step 4Combine flour, baking powder and salt. Stir into oat mixture just until blended. Do not overmix.

Step 5Spoon half the batter into the paper lined muffin cups. Place 1/12th of the cream cheese into the center of batter in each cup. Top with remaining batter, making sure cream cheese is covered with batter.

Step 6Combine brown sugar and oats to make topping. Sprinkle some on each muffin. Bake for about 20 minutes or until centers are set.

Step 7Remove muffins from pan and cool on rack. SO GOOD TO EAT WARM!
