oatmeal cream cheese muffins

These muffins are by far our daughter's favorite...so I usually double the batch! They are especially good warm...not a better way to start a morning! (from a Great American recipe)

Ingredients

  • 1 cup old-fashioned cooking oats
  • 1 cup milk
  • 1/2 cup packed brown sugar
  • 1/4 cup vegetable oil
  • 1 - egg, beaten
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 ounces cream cheese, divided into 12 parts
  • 12 - paper muffin cups
  • TOPPING
  • 1 tablespoon old-fashioned cooking oats
  • 1 tablespoon packed brown sugar

How To Make oatmeal cream cheese muffins

  • Step 1
    Preaheat oven to 350 degrees. Place paper muffin cups in muffin tin.
  • Step 2
    In medium bowl, place oats and milk. Let stand for 30 minutes.
  • Step 3
    Stir brown sugar, oil and egg into soaked oats.
  • Step 4
    Combine flour, baking powder and salt. Stir into oat mixture just until blended. Do not overmix.
  • Step 5
    Spoon half the batter into the paper lined muffin cups. Place 1/12th of the cream cheese into the center of batter in each cup. Top with remaining batter, making sure cream cheese is covered with batter.
  • Step 6
    Combine brown sugar and oats to make topping. Sprinkle some on each muffin. Bake for about 20 minutes or until centers are set.
  • Step 7
    Remove muffins from pan and cool on rack. SO GOOD TO EAT WARM!
