The apple is the official fruit of New York, so it's no wonder the Apple Muffins was destined to become the official muffin of the state of New York. It's just a nice bonus that New York's official Apple Muffin recipe is so scrumptious. It's a featured offering at most Manhattan bakeries and delis (like Petrossian Café on 7th Avenue, between 57th and 58th Streets). There are lots of versions of this recipe, but none seem to compare with the original that's baked fresh daily in many of Manhattan's delis. This recipe really is quite good though.

Ingredients
- MUFFINS
- 2 cups all-purpose flour
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1/8 teaspoon ground nutmeg
- 2 cups apples (cortland, macintosh, pippin are good varieties), coarsely chopped
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 3 large eggs
- 1/2 cup butter, melted
- 4 ounces cream cheese, cut into small pieces
- 1/2 teaspoon vanilla extract
- TOPPING
- 1/2 cup walnuts, finely chopped
- 1/2 cup brown sugar
- 1/3 can all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon grated lemon peel
- 2 tablespoons butter, melted
How To Make new york state apple muffins

Step 1Preheat oven to 375°F. Line 24 cups of a regular-size muffin pan with 24 paper cupcake liners; set aside.

Step 2Combine flour, brown sugar, sugar, baking soda, salt, cinnamon, cloves and nutmeg; set aside.

Step 3Combine apples, raisins, walnuts, eggs, butter, cream cheese, and vanilla. Stir apple mixture into the dry ingredients, adding a little at a time, and stir until just combined (batter will be stiff). Do not over-mix.

Step 4Put equal portions of the batter into 24 paper-lined muffin cups about 2/3 full.

Step 5Combing all of the topping ingredients and mix well. Sprinkle topping over the batter.

Step 6Bake at 375° for 20 to 30 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to cool completely on wire racks. (Makes 2 dozen muffins)
