The name comes from the addition of molasses. Another recipe by Paul Prudhomme.

    3/4 c hot water
  • ·
    1/2 c molasses
  • ·
    1/4 c milk
  • ·
    2 c whole wheat flour
  • ·
    1 c flour
  • ·
    3/4 c sugar
  • ·
    3 t. baking powder
  • ·
    1 t. baking soda
  • ·
    1 t. salt
  • ·
    1 1/2 c coarsely chopped pecans

How to Make New Orleans Black Muffins


  1. Combine water and molasses stirring until well blended. Stir in milk till blended. In a large bowl,sift dry ingredients . Fold in the liquid mixture and pecans into dry ingredients just till flour is throughly mixed. Spoon into 12 greased muffin cups. Bake at 300 degrees. 45 minutes to 1 hour. Remove from pan immediately and serve while hot.
