~ my tasty tuna melts ~

These yummy melts make for a quick and tasty lunch. I used Havarti cheese, but any great melting cheese would work. A slice of fresh home grown tomato will put them over the top! Enjoy!

Ingredients

  • 2 - 2.0 ounces packets of albacore tuna in water - drained if need be ( individual sized )
  • 1 tablespoon each - dijon mustard, chopped red onion, chopped red bell pepper
  • 1 small stalk celery - diced small
  • 2 tablespoons mayonnaise
  • squeeze - lime juice - about 1/2 tsp
  • 4 slices ripe tomato
  • fresh - cracked black pepper & salt to taste
  • 2 - english muffins, sliced in half
  • 4 slices havarti cheese - or your favorite melting cheese

How To Make ~ my tasty tuna melts ~

  • Step 1
    Mix all tuna salad ingredients together in a bowl, blend well.
  • Step 2
    Cut muffins in half, horizontally - lay out cut side up on broiler pan. Using my small cookie scoop, I added 2 scoops per muffin half. Spread evenly.
  • Step 3
    Top each with a slice of tomato, about the size of the muffin. Salt and pepper if desire.
  • Step 4
    Lay a piece of cheese over each slice of tomato. Place under broiler and broil for 5 minutes or until cheese is melted and bubbly.
  • Step 5
    Serve immediately.
