This recipes dates back to the 1930's. They are excellent breakfast muffins and healthy snacks. You'll need a HUGE mixing bowl as it makes a big batch.

Ingredients

  • 2 c
    sugar
  • 4 c
    all purpose flour
  • 4 tsp
    cinnamon, ground
  • 4 tsp
    baking soda
  • 1 tsp
    salt
  • 1 c
    shredded coconut
  • 1 c
    raisins
  • 4 c
    shredded carrots
  • 2 c
    shredded apple
  • 1 c
    pecan halves
  • 6 large
    eggs
  • 2 scant c
    vegetable oil
  • 1 Tbsp
    pure vanilla

How to Make Morning Glory Muffins

Step-by-Step

  1. Preheat oven to 375 degrees.
  2. Sift dry ingredients into large bowl. Add fruit and nuts and stir well. Add eggs, oil, vanilla and stir only until combined.
  3. Spoon batter into greased cupcake tins or papers. Bake at 375 degrees for 30 minutes.
  4. Muffins should "ripen" for 24 hours to attain maximum flavor.
