This recipes dates back to the 1930's. They are excellent breakfast muffins and healthy snacks. You'll need a HUGE mixing bowl as it makes a big batch.

Ingredients

  • 2 cups sugar
  • 4 cups all purpose flour
  • 4 teaspoons cinnamon, ground
  • 4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup shredded coconut
  • 1 cup raisins
  • 4 cups shredded carrots
  • 2 cups shredded apple
  • 1 cup pecan halves
  • 6 large eggs
  • 2 scant cups vegetable oil
  • 1 tablespoon pure vanilla

How To Make morning glory muffins

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Sift dry ingredients into large bowl. Add fruit and nuts and stir well. Add eggs, oil, vanilla and stir only until combined.
  • Step 3
    Spoon batter into greased cupcake tins or papers. Bake at 375 degrees for 30 minutes.
  • Step 4
    Muffins should "ripen" for 24 hours to attain maximum flavor.
