Ingredients
- 2 cups sugar
- 4 cups all purpose flour
- 4 teaspoons cinnamon, ground
- 4 teaspoons baking soda
- 1 teaspoon salt
- 1 cup shredded coconut
- 1 cup raisins
- 4 cups shredded carrots
- 2 cups shredded apple
- 1 cup pecan halves
- 6 large eggs
- 2 scant cups vegetable oil
- 1 tablespoon pure vanilla
How To Make morning glory muffins

Step 1Preheat oven to 375 degrees.

Step 2Sift dry ingredients into large bowl. Add fruit and nuts and stir well. Add eggs, oil, vanilla and stir only until combined.

Step 3Spoon batter into greased cupcake tins or papers. Bake at 375 degrees for 30 minutes.

Step 4Muffins should "ripen" for 24 hours to attain maximum flavor.
