baking soda
1 tsp
salt
1 c
shredded coconut
1 c
raisins
4 c
shredded carrots
2 c
shredded apple
1 c
pecan halves
6 large
eggs
2 scant c
vegetable oil
1 Tbsp
pure vanilla

How to Make Morning Glory Muffins

Step-by-Step

  • 1Preheat oven to 375 degrees.
  • 2Sift dry ingredients into large bowl. Add fruit and nuts and stir well. Add eggs, oil, vanilla and stir only until combined.
  • 3Spoon batter into greased cupcake tins or papers. Bake at 375 degrees for 30 minutes.
  • 4Muffins should "ripen" for 24 hours to attain maximum flavor.
