Step 1SIFT TOGETHER FLOUR,CINNAMON,SODA AND SALT INTO A MIXING BOWL. ADD CARROTS, RAISINS, COCONUT,PECANS, APPLE AND SUGAR.

Step 2IN A SMALL BOWL BEAT EGGS, ADDING OIL AND VANILLA. POUR EGG MIXTURE INTO FLOUR MIXTURE, AND STIR TILL BLENDED, DO NOT OVERSTIR, IT WILL MAKE THE DOUGH TOUGH.

Step 3POUR BATTER INTO WELL GREASED MUFFIN TINS. BAKE AT 350* FOR 30-35 MINUTES OR UNTIL MUFFINS ARE GOLDEN AND SPRING BACK WHEN TOUCHED...ENJOY...
