yankee cornbread
I played with cornbread recipes until I made a batch my husband would actually eat. It's similar to spoonbread, but not as eggy. Very moist and pretty sweet, this is NOT southern cornbread! :)

Ingredients
- 3 cups flour
- 1 cup corn meal
- 1 1/2 cups sugar
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2/3 cup oil
- 1/3 cup butter, melted
- 4 - eggs, beaten
- 2 1/2 cups milk
How To Make yankee cornbread

Step 1Preheat oven to 350*. Grease 9x13 baking dish.

Step 2Mix flour, corn meal, sugar, baking powder, and salt.

Step 3Add oil, butter, eggs, and milk. Fold gently, until just moistened. Pour into baking dish.

Step 4Bake 45 minutes, or until lightly browned.
