moist and delicious blueberry muffins

i found this recipe on the back of a bag of sugar. you don't taste the oatmeal or the orange juice, but they make the muffins so moist, you won't want to stop eating at just one. i hope you will enjoy them as much as my family and friends.

Ingredients

  • 1 cup uncooked oatmeal
  • 1 cup orange juice
  • 3 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 1 cup oil
  • 3 - eggs, slightly beaten
  • 3 cups blueberries, rinsed

How To Make moist and delicious blueberry muffins

  • Step 1
    Preheat at 375 line muffin tins mix together the oatmeal and orange juice and set aside.
  • Step 2
    mix oil & eggs until blended, then fold in the oatmeal and orange juice mixture. add the rest of the ingredients and mix until just combined, fold in blueberries(i actually use less then 3 cups).
  • Step 3
    fill muffin tins 3/4 full top with a mixture of cinnammon sugar and nuts if desired. bake 20-25 minutes until done.
