These little muffins are quick and easy to put together. So moist and flavorful, you can't just eat one!

Ingredients

  • 3 - ripe bananas, mashed
  • 1/3 cup butter, melted
  • 1 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup chopped walnuts

How To Make mini banana muffins

  • Step 1
    In a bowl, blend together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix mashed bananas and the melted butter together. Add the sugar, egg and vanilla, mix well.
  • Step 2
    Add the flour mixture to the banana mixture, stir. Add the chopped walnuts. Mix together, but don't over mix.
  • Step 3
    Line mini muffin tins with paper liners. Fill each liner 3/4 full. Bake at 350 degrees, for 15 minutes, or until a toothpick comes out clean. Muffins will be lightly browned.
