Ingredients
- 3 - ripe bananas, mashed
- 1/3 cup butter, melted
- 1 cup sugar
- 1 large egg, beaten
- 1 teaspoon pure vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup chopped walnuts
How To Make mini banana muffins

Step 1In a bowl, blend together flour, baking powder, baking soda, cinnamon, and salt. In a separate bowl, mix mashed bananas and the melted butter together. Add the sugar, egg and vanilla, mix well.

Step 2Add the flour mixture to the banana mixture, stir. Add the chopped walnuts. Mix together, but don't over mix.

Step 3Line mini muffin tins with paper liners. Fill each liner 3/4 full. Bake at 350 degrees, for 15 minutes, or until a toothpick comes out clean. Muffins will be lightly browned.
