mincemeat muffins!

This is an old family recipe... an old fashion muffin with old fashion taste! Very good and moist... Enjoy!

Ingredients

  • DRY INGREDIENTS
  • 2 cups all purpose flour
  • 1/2 cup brown sugar, firmly packed
  • 1/2 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • WET INGREDIENTS
  • 2 large eggs (well beaten)
  • 1 tablespoon lemon juice
  • - zest of one lemon
  • 1 cup apple sauce
  • 4 tablespoons melted butter or margarine
  • 1 cup mincemeat
  • OPTIONAL INGREDIENTS
  • 1/2 cup pecans (chopped)
  • 1/2 cup craisins (dried cranberries) (chopped)

How To Make mincemeat muffins!

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    Mix together dry ingredients in large bowl. Set aside.
  • Step 3
    Beat the eggs well. Beat in all remaining wet ingredients.
  • Step 4
    Stir the wet ingredients into the dry ingredients (don't over stir).
  • Step 5
    Put batter into cupcake liners in cupcake pan. Bake 18 - 28 minutes (depending on size of muffins and your oven).
  • Step 6
    Check doneness by inserting a toothpick, if it comes out clean it is done.
