This is an old family recipe... an old fashion muffin with old fashion taste!

Ingredients

  • DRY INGREDIENTS

  • 2 c
    all purpose flour
  • 1/2 c
    brown sugar, firmly packed
  • 1/2 tsp
    ground ginger
  • 1 1/2 tsp
    ground cinnamon
  • 1 tsp
    salt
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • WET INGREDIENTS

  • 2 large
    eggs (well beaten)
  • 1 Tbsp
    lemon juice
  • ·
    zest of one lemon
  • 1 c
    apple sauce
  • 4 Tbsp
    melted butter or margarine
  • 1 c
    mincemeat
  • OPTIONAL INGREDIENTS

  • 1/2 c
    pecans (chopped)
  • 1/2 c
    craisins (dried cranberries) (chopped)

How to Make Mincemeat Muffins!

Step-by-Step

  1. Preheat oven to 400 degrees.
  2. Mix together dry ingredients in large bowl. Set aside.
  3. Beat the eggs well. Beat in all remaining wet ingredients.
  4. Stir the wet ingredients into the dry ingredients (don't over stir).
  5. Put batter into cupcake liners in cupcake pan.

    Bake 18 - 28 minutes (depending on size of muffins and your oven).
  6. Check doneness by inserting a toothpick, if it comes out clean it is done.
