Ingredients
- 1 cup rolled oats, regular or quick
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/2 cup melted butter or margarine
- 1/2 cup brown sugar, not packed
- 1 - egg
- 3/4 cup shredded coconut
- 1/4 cup crushed pineapple, drained
- 1/3 cup chopped macadamia nuts
- BROWN SUGAR TOPPING:
- 1/4 cup all-purpose flour
- 2 tablespoons rolled oats
- 1/4 cup brown sugar
- 3 tablespoons butter or margarine
- 1/4 teaspoon cinnamon, optional
How To Make maui muffins

Step 1Combine oats and buttermilk in a bowl. In a separate bowl combine flour, salt, baking soda and powder. Blend with a metal whisk.

Step 2Stir the melted butter, brown sugar, egg, coconut, pineapple and nuts together. Stir into the oat mixture. Add the dry ingredients and stir until moistened.

Step 3Spoon batter into greased muffin cups. In a separate bowl combine topping ingredients and mix until crumbly. Sprinkle over the muffins.

Step 4Bake for 20 minutes at 400 degrees. Let the muffins sit for a few minutes before removing onto rack. Serve muffins while still warm.
