Ingredients

1 c
rolled oats, regular or quick
1 c
buttermilk
1 c
all-purpose flour
1/4 tsp
salt
1/2 tsp
baking soda
1 1/2 tsp
baking powder
1/2 c
melted butter or margarine
1/2 c
brown sugar, not packed
1
egg
3/4 c
shredded coconut
1/4 c
crushed pineapple, drained
1/3 c
chopped macadamia nuts

BROWN SUGAR TOPPING:

1/4 c
all-purpose flour
2 Tbsp
rolled oats
1/4 c
brown sugar
3 Tbsp
butter or margarine
1/4 tsp
cinnamon, optional

How to Make Maui Muffins

Step-by-Step

  • 1Combine oats and buttermilk in a bowl. In a separate bowl combine flour, salt, baking soda and powder. Blend with a metal whisk.
  • 2Stir the melted butter, brown sugar, egg, coconut, pineapple and nuts together. Stir into the oat mixture. Add the dry ingredients and stir until moistened.
  • 3Spoon batter into greased muffin cups. In a separate bowl combine topping ingredients and mix until crumbly. Sprinkle over the muffins.
  • 4Bake for 20 minutes at 400 degrees. Let the muffins sit for a few minutes before removing onto rack. Serve muffins while still warm.
