These are quite good; and come from my friend and neighbor: Virginia Rushton. We made a cookbook in our church group (known as Relief Society, in The Church of Jesus Christ of Latter Day Saints)and she shared this one with us. It's great!

Ingredients

  • 2 c
    bisquick or substitute (on just a pinch)
  • 1/4 c
    granulated sugar
  • 1
    egg
  • 1/2 c
    milk
  • 1/2 tsp
    ground nutmeg
  • 1/4 tsp
    ground allspice
  • 1 small
    can of mandarin oranges, chopped and drained

How to Make Mandarin Orange Muffins

Step-by-Step

  1. Mix all together, add oranges. Spoon into greased 12 muffin tin (paper liners may be used instead of greasing). Top with cinnamon, allspice and sugar mixture. Bake at 400 degrees for 15 minutes.
