Ingredients
- 2 cups flour
- 1/3 cup sugar
- 2 - eggs
- 1 1/2 teaspoons vanilla extract
- 1/2 cup coconut shredded
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 cup milk
- 1/2 cup canola oil
- 1/4 cup crushed pineapple, drained
How To Make make ahead pineapple muffins

Step 1Preheat oven to 400. Prep a muffin tin with muffin liners.

Step 2In a large bowl, stir together the flour, baking powder, sugar and salt.

Step 3In a 2 cup measuring cup measure out milk. Add the eggs and vanilla and lightly beat. This can be refrigerated and add to the dry ingredients right before baking.

Step 4Pour wet mixture into dry mixture. Add pineapple and coconut and stir to combine.

Step 5Spoon batter into prepared muffin tin. Fill 3/4 full.

Step 6Bake for 18-20 minutes. Allow to cool slightly before serving.
