Ingredients

  • 1 c
    butter or margarine, softened
  • 1 c
    sugar
  • 4
    eggs, separated
  • 2 c
    all-purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    lemon juice
  • STREUSEL TOPPING

  • 1/4 c
    finely chopped nuts
  • 2 Tbsp
    all-purpose flour
  • 2 Tbsp
    brown sugar
  • 1/4 tsp
    ground nutmeg

How to Make Lemon Streusel Muffins

Step-by-Step

  1. Preheat oven to 375 degrees.
  2. In a mixing bowl, cream butter and sugar.
  3. Beat in egg yolks.
  4. In a separate bowl, combine flour, baking powder and salt; add to the creamed mixture alternately with lemon juice.
  5. In a small bowl, beat egg whites until stiff; fold into batter.
  6. Fill greased or paper-lined muffin cups 2/3 full.
  7. Combine streusel ingredients; sprinkle over muffins.
  8. Bake at 375 degrees for 15-20 minutes or until muffins test done.
  9. Cool for 5 minutes before removing from pan.
