Ingredients
- 1 cup butter or margarine, softened
- 1 cup sugar
- 4 - eggs, separated
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup lemon juice
- STREUSEL TOPPING
- 1/4 cup finely chopped nuts
- 2 tablespoons all-purpose flour
- 2 tablespoons brown sugar
- 1/4 teaspoon ground nutmeg
How To Make lemon streusel muffins

Step 1Preheat oven to 375 degrees.

Step 2In a mixing bowl, cream butter and sugar.

Step 3Beat in egg yolks.

Step 4In a separate bowl, combine flour, baking powder and salt; add to the creamed mixture alternately with lemon juice.

Step 5In a small bowl, beat egg whites until stiff; fold into batter.

Step 6Fill greased or paper-lined muffin cups 2/3 full.

Step 7Combine streusel ingredients; sprinkle over muffins.

Step 8Bake at 375 degrees for 15-20 minutes or until muffins test done.
