You can make these as muffins or mini breads. Anyway you make them, they are luscious.

  • 2 1/2 c
    all purpose flour
  • 1/2 c
    granulated sugar
  • 1/4 c
    brown sugar, firmly packed
  • 2 tsp
    pumpkin pie spice
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 2
  • 1 c
    pumpkin, canned (not pie mix)
  • 1/2 c
  • 1/4 c
    vegetable oil
  • 1 tsp
  • 1/2 c
    chopped pecans

  • 1/3 c
    brown sugar, firmly packed
  • 1/3 c
    finely chopped pecans
  • 1/4 c
    all purpose flour
  • 1/4 c
    cold butter

How to Make Jumbo Pumpkin Pecan Muffins


  1. Combine first 7 ingredients. In another bowl, whisk eggs, pumpkin, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in pecans.
  2. In small bowl combine topping ingredients. Cut in butter.
  3. Prepare a 12 ct muffin tin with Pam. Fill each cup wit 2/3 of batter. Top each with topping.
  4. Bake at 350F for 20-25 minutes or until wooden pick comes out clean. Cool for 5 minutes and then turn onto a baking rack to cool.
