Ingredients
- 2 1/2 cups all purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, firmly packed
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 - eggs
- 1 cup pumpkin, canned (not pie mix)
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
- 1/2 cup chopped pecans
- TOPPING
- 1/3 cup brown sugar, firmly packed
- 1/3 cup finely chopped pecans
- 1/4 cup all purpose flour
- 1/4 cup cold butter
How To Make jumbo pumpkin pecan muffins

Step 1Combine first 7 ingredients. In another bowl, whisk eggs, pumpkin, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in pecans.

Step 2In small bowl combine topping ingredients. Cut in butter.

Step 3Prepare a 12 ct muffin tin with Pam. Fill each cup wit 2/3 of batter. Top each with topping.

Step 4Bake at 350F for 20-25 minutes or until wooden pick comes out clean. Cool for 5 minutes and then turn onto a baking rack to cool.
