We perfer the cornmeal over the flour in most recipes for this.A real moist comfort food. Freezes well.

  • 2 cups yellow cornmeal
  • 1 can 14 oz cream of corn
  • 1 tablespoon oil
  • 2 - eggs
  • 1/2 cup sour cream
  • 3/4 cup milk
  • 3 tablespoons jalapenos [chopped w/juice from can]
  • 1/2 - onion lg.

How To Make jan's mexican cornbread

  • Step 1
    Prepare muffin pan. Grease with crisco.
  • Step 2
    mix all ingredients. Pour into pan or muffin pan.
