We perfer the cornmeal over the flour in most recipes for this.A real moist comfort food. Freezes well.

    yellow cornmeal
  • 1 can(s)
    14 oz cream of corn
  • 1 Tbsp
    oil
  • 2
    eggs
  • 1/2 c
    sour cream
  • 3/4 c
    milk
  • 3 Tbsp
    jalapenos [chopped w/juice from can]
  • 1/2
    onion lg.

How to Make Jan's Mexican Cornbread

Step-by-Step

  1. Prepare muffin pan. Grease with crisco.
  2. mix all ingredients. Pour into pan or muffin pan.
