jam & cream cheese muffins
These muffins are sooo goood. I love using Strawberry or Peach jam. You can use any flavor of jam that you desire. Adapted from taste of home muffins and cupcake magazine.

Ingredients
- MUFFIN INGREDIENTS :
- 2 1/2 cups all purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 - egg
- 1 1/4 cups milk
- 1/2 cup light brown sugar ; packed
- 1/3 cup butter, melted
- 1/2 teaspoon almond extract
- FILLING INGREDIENTS :
- 8 ounces cream cheese
- 1/4 teaspoon almond extract
- 1/2 cup powdered sugar
- 1/4 to 1/3 cup jam flavor of your choosing ; stirred smooth
How To Make jam & cream cheese muffins

Step 1Preheat oven @ 375°

Step 2In a mixing bowl , beat the cream cheese , powdered sugar and extract until smooth ; set aside.

Step 3In a large bowl , combine the flour , baking powder and salt

Step 4In another small mixing bowl , beat the egg , milk , brown sugar , butter and extract .

Step 5Stir in the dry ingredients just until moistened.

Step 6Spoon 1/2 of the batter into greased muffin cups.

Step 7Top each with 1 TBS. cream cheese mixture and 1 Teas. of the jam.

Step 8Top with the remaining batter.

Step 9Bake for 18-20 minutes or until a tooth pick comes out clean and the tops are golden brown.

Step 10Cool for 5 minutes in the pans and then remove onto a wire rack.
