Ingredients

- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup lite corn syrup
- 1/4 cup mazola cooking oil
- 1 cup cream-style corn
- 4 ounces shredded monterey jack cheese
- 2 tablespoons chopped jalapeno pepper
How To Make jalapeno corn muffins

Step 1preheat oven to 400°F. Spray 12 muffin cups with cooking spray; set aside.

Step 2In a medium bowl, combine flour, cornmeal, baking powder, and salt.

Step 3In a large bowl, combine eggs, corn syrup, and oil. Stir in the flour mixture until well blended. Stir in the corn, cheese, and chopped jalapeno. Spoon into prepared muffin cups.

Step 4Bake for 15 to 20 minutes or until lightly browned and firm to the touch. Cool in pan for 5 minutes on wire rack. Remove from pan and serve.
