Ingredients

  • - cooking spray
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup lite corn syrup
  • 1/4 cup mazola cooking oil
  • 1 cup cream-style corn
  • 4 ounces shredded monterey jack cheese
  • 2 tablespoons chopped jalapeno pepper

How To Make jalapeno corn muffins

  • Step 1
    preheat oven to 400°F. Spray 12 muffin cups with cooking spray; set aside.
  • Step 2
    In a medium bowl, combine flour, cornmeal, baking powder, and salt.
  • Step 3
    In a large bowl, combine eggs, corn syrup, and oil. Stir in the flour mixture until well blended. Stir in the corn, cheese, and chopped jalapeno. Spoon into prepared muffin cups.
  • Step 4
    Bake for 15 to 20 minutes or until lightly browned and firm to the touch. Cool in pan for 5 minutes on wire rack. Remove from pan and serve.
