How to Make Jalapeno Corn Muffins
1preheat oven to 400°F. Spray 12 muffin cups with cooking spray; set aside.
2In a medium bowl, combine flour, cornmeal, baking powder, and salt.
3In a large bowl, combine eggs, corn syrup, and oil. Stir in the flour mixture until well blended. Stir in the corn, cheese, and chopped jalapeno. Spoon into prepared muffin cups.
4Bake for 15 to 20 minutes or until lightly browned and firm to the touch. Cool in pan for 5 minutes on wire rack. Remove from pan and serve.
